Mirabelle plums are the little aromatic sisters of the plum and shine with plenty of beta-carotene (the precursor for vitamin A), vitamin C and various B vitamins. In addition, the fibre from wholemeal flour has a cholesterol-lowering effect: the indigestible food components bind bile acids in the digestive tract, from which the body would otherwise form cholesterol.

For all crunch lovers: Simply sprinkle chopped almond kernels over the cake before baking. The nuts bring an extra amount of heart-healthy omega-3 fatty acids into play.

100 grams sugar

700 grams Red Mirabelle plum
180 grams Marzipan
4 tablespoons Orange juice
4 tablespoons ground almonds (40 grams)
2 tablespoons chopped almonds (20 grams)
ground cinnamon
3 tablespoons powdered sugar (30 grams)

Preparation steps

1.

Mix flour with sugar and 1 pinch of salt, pile on the work surface and make a well in the middle. Place 1 egg into the well and arrange 200 grams (approximately 7 ounces) of margarine, cut into small pieces, around the well. Knead into smooth dough, shape into a ball and wrap in plastic wrap. Refrigerate for 30 minutes.

Rinse, halve and pit Mirabelle plums.

Separate remaining eggs. Whisk egg yolks with marzipan and orange juice. Beat egg whites with 1 pinch of salt until stiff. Add almonds to egg yolk mixture, fold in egg whites.

Grease 2 tart pans (20 cm in diameter) (approximately 8 inch) with remaining margarine.

Halve pastry and roll out on a floured work surface. Line tart pans with pastry, making an edge all around.

Spread tarts with cream and arrange plums on top, cut side up, sprinlke with cinnamon and powdered sugar. Bake in preheated oven at 180°C (convection oven 160°C; gas mark 2-3) (approximately 350°F) for about 30 minutes. Remove from oven and serve.
