- 5 sheets gelatin
- 2 cups milk
- 1 Tbsp honey
- ⅔ cup Dark chocolate (chopped)
- ⅜ cup double cream
- ⅔ cup Peppermint crisp (or mint chocolate, crumbled or chopped)

Soak the gelatine in cold water.

Bring the milk to the boil with the honey and pour over the dark chocolate, stirring. Allow to melt, then squeeze the excess moisture out of the gelatine and stir into the chocolate mixture. Stir over a bowl of iced water until the mixture begins to set.
3.
Whip the cream until stiff and fold in, together with approx. 60 g of crispies. Spoon into glass dishes and chill for at least 4 hours.
4.
Serve garnished with the remaining crumbled crispies and with whipped cream, if desired.
