Preparation steps

For the dough, combine the flour with small pieces of the butter, add the salt, a pinch of sugar and 4 tablespoons water in a mixing bowl. Mix with the dough hook of the hand mixer, then knead on the work surface quickly to form a smooth dough. Cover the dough and refrigerate at least 30 minutes.

For the filling, drain the mozzarella cubes. Stir the crème fraîche together with the eggs and flour. Grate the Parmesan and Gouda coarsely and stir into the crème fraîche mixture. Season with salt and pepper. Preheat the oven to 200°C (approximately 375°F). Grease the baking dishes.

Roll out the refrigerated dough on lightly floured surface into thin circles (13 cm) (approximately 5 inches). Place the dough in the molds, forming an edge and pressing lightly. Prick the dough several times with a fork and pre-bake in a hot oven on the middle shelf for 8 minutes. Remove the ramekins and fill first with the Mozzarella cubes, then with the crème fraîche mixture. Bake for 20-25 minutes in the oven until golden brown and serve immediately.
