Ingredients

For the panettone
300 grams
2 tablespoons
½ cube
fresh Yeast
125 milliliters
lukewarm Milk
60 grams
melted Butter

2 teaspoons
grated Lemon peel

Pastry flour (for working the dough)
Butter (for the ramekins)

Ramekins (10-12 cm or 3-4 inch diameter)

Preparation steps

Stir the yeast with the milk until smooth. Mix the flour, sugar, butter, eggs, currants, 1 pinch of nutmeg, salt and lemon zest. Add the yeast mixture and knead with the dough hook of an electric mixer. Cover and let the dough rise in a warm place for 30 minutes.

Knead the dough on a floured surface again, form into 6 equal-sized balls and place in the greased ramekins. Cover and let rise for another 20 minutes. Preheat the oven to 180°C (approximately 350°F).

Bake the Panettone on the middle rack of the oven for 20-30 minutes. Let cool briefly, then turn out of the molds. Serve warm or cooled.
