Mini Muffins with Orange Glaze and Fruit
- For the batter
- 150 grams Cookie (with orange filling)
- 200 grams Pastry flour
- 2 teaspoons grated Orange peel
- 50 grams Chocolate candy
- 1 ½ teaspoons Baking powder
- ½ teaspoon baking soda
- 2 eggs
- 80 grams sugar
- 60 milliliters vegetable oil
- 50 milliliters Orange juice
- 150 grams Yogurt (0.1% fat)
- 1 Mini muffin baking tin (24-well or 24 mini paper baking cups)
For the batter: Cut the cookies into small pieces. Place the flour in a bowl and stir in the cookies, orange peel, chocolate beans, baking powder and baking soda until well combined. In another bowl, beat the eggs with the sugar, oil, orange juice and yogurt until well combined.
Preheat the oven to 180°C (approximately 350°F). Grease a 24 well mini muffin pan or line with paper liners.
Stir the flour mixture into the egg mixture just until moistened. Spoon the mixture into the muffin tin and bake until a toothpick inserted into a muffin comes out clean, 15-20 minutes. Cool in the pan for 5 minutes, then remove and cool on a wire rack.
For decoration: In a bowl, mix the powdered sugar with the orange juice. Dip the top of the muffins into the glaze and let it dry slightly. Rinse the star fruit and cut into 24 slices. Top each muffin with a slice of star fruit and either a cape gooseberry or a cherry.
