For the quiche
400 grams Pastry flour
150 grams butter
1 tsp salt
10 Tbsps water
400 grams smoked streaky Smoked bacon
2 stalks Leeks
6 egg yolks
500 grams Whipped cream
salt
freshly ground peppers
250 grams grated Emmentaler cheese
For the preparation
12 small fireproof Ramekins

Preparation steps

For the preparation: Lightly grease ramekins and sprinkle with flour.

For the quiche: Mix flour, butter, salt and water into a shortcrust. Shape into a ball, place between 2 layers of plastic wrap and roll out thinly roll thin and line ramekins with the dough. Prick dough base with a fork several times.

Dice bacon into cubes, cut leeks into thin rings. Spread both on the dough. Mix together egg yolk, cream, spices and cheese and spread over bacon and leek mixture. Bake quiches in a preheated oven at 180°C (approximately 350°F) on the second rack from the bottom for about 30 minutes. Serve immediately.
