Mini Fritters with Cinnamon
Mix flour, sugar, chopped butter, eggs and white wine quickly into a smooth dough. Shape into a ball and wrap in plastic wrap. Refrigerate for about 1 hour.
On a floured surface, roll out dough and divide into many pieces, each about 1 cm (approximately 1/3 inch). Shape pieces into rolls about 0.5 cm (approximately 1/4 inch) thick. Remove small pieces from rolls and shape into balls about 0.5 cm (approximately 1/4 inch) diameter.
Heat peanut oil in a pot or deep fryer to about 160°C (approximately 320°F). Fry fritters in batches until golden brown. Lift from oil with a slotted spoon and drain on paper towels.
Heat honey in a saucepan and simmer over low heat. Dip fritters in honey and drain on a wire rack. Dust with cinnamon and decorate with multi-colored sprinkles, if desired. To serve, arrange on a plate.
