For the batter
4 eggs
125 grams Quark
125 grams Chestnut puree
1 tablespoon cocoa powder
3 tablespoons cornstarch
100 grams Cherries (pitted)
½ teaspoon white peppers (coarsely ground)
150 grams sugar
butter (for greasing)
Pastry flour (for dusting)
powdered sugar (for dusting)
For the garnish

Preparation steps

Preheat the oven to 180°C (approximately 350°F).

For the batter: Separate eggs. Beat egg whites until stiff, gradually add about half of the sugar. Beat yolks with half the sugar until creamy, then stir in quark and chestnuts. Combine cocoa and cornstarch and fold into yolk mixture. Puree cherries and pepper and fold into batter. Fold egg whites into batter and pour into buttered and floured ramekins. Bake for about 20 minutes.

For the garnish: Remove from oven and release from ramekins. Beat cream until stiff. Top each cake with whipped cream and cherries and serve dusted with powdered sugar.
