For the cheesecake
175 grams Shortbread
50 grams melted butter
2 lemons
300 grams Double cream
75 grams sugar
200 grams cream cheese
250 grams Strawberries
100 grams Blueberries
For the pan
powdered sugar (for dusting)
6 Tartlet pans (10 cm in diameter)

Preparation steps

Line a tart pan with plastic wrap.

Place the shortbread cookies in a freezer bag and crush with a rolling pin. Mix well with the melted butter in a bowl. Press the crumbs into the bottom of the pans. Chill.

Zest the lemons. Set aside 1/3 of the zest for garnishing. Add the other 2/3 of the zest with the double cream and sugar. Bring slowly to a boil and let simmer for about 2 minutes. Remove from heat.

Squeeze the lemon, stir the juice into the hot cream and let sit for about 10 minutes. Allow to cool. Stir in the cream cheese. Transfer the cheese mixture equally into each pan. Smooth out and chill for approximately 8 hours.

Rinse the berries and pat dry. Cut the strawberries into halves or quarter depending on the size.

6.

Remove the tarts from the pan. Remove the plastic wrap and place each tart on the plate.

7.

Garnish each cheesecake with the berries and the reserved lemon zest. To serve, dust with powdered sugar.
