Mini Blueberry Pancakes
Pick through the berries, rinse and pat dry. Combine the flour. sugar, vanilla sugar, lemon zest and salt in a bowl. Add the milk and stir until smooth. Fold the berries into the batter.
Put some vegetable oil in a hot pan and pour in 1-2 tablespoons of batter for each pancake. Cook until light brown on both sides. If desired, keep the pancakes warm in the oven at 80°C (approximately 175°F).
To serve, lightly dust with powdered sugar. For an extra treat, serve with a scoop of vanilla ice cream.
