Ingredients

minced lamb
½ bunch
fresh mint (finely chopped)

onion (finely chopped)
ground cinnamon
freshly ground peppers

Brik pastry sheet alternatively filo or yufka pastry (about 350 g)

Preparation steps

1.
Mix the minced lamb with the mint, onion, cinnamon, pepper, salt and eggs and knead to combine.

Heat a nonstick frying pan and brown the mince mixture over a high heat for 4 minutes. Set aside and leave to cool.

Cut one sheet of brik pastry in half lengthwise and cut into large rectangles (approx. 10 x 13 cm). Then fill with the filling. Repeat the process with the remaining sheets of pastry. (Cut and fill each sheet of pastry before using the next one, otherwise they will dry out. )
4.
Spread about 1 tbsp of the filling lengthwise down the middle of each rectangle. Fold the ends over the filling, then brush the sides with whisked egg yolk and roll up.
5.
Heat 4-5 tbsp olive oil in a frying pan and fry the rolls on all sides for 4-5 minutes, until golden brown. the rolls can also be steamed, in which case they are less fatty. Serve with a spicy sauce for dipping if you wish.
