Preparation steps

Beat the eggs with the sugar until fluffy. Mix the flour with the baking powder, spices, and the orange zest and stir gradually into the egg mixture. Fold in the almonds and chopped walnuts. Dice the figs and dates. Mix with the candied peel, raisins, and cherries. Sprinkle with a little flour and work into the dough.

Grease the baking pans and sprinkle with ground hazelnuts.

Preheat the convection oven to 160°C (approximately 325°F). Pour the mixture into the pans and bake for about 35 minutes on the middle rack. Leave to cool, then turn out the cakes.

Roll out the marzipan into four circles about 15 cm (approximately 6 inches) in diameter and place over the cakes. Brush with a little water. Cut out the fondant and place on top of the marzipan. Brush with a little water and apply the gold and silver leaf. Serve on small decorative plates.
