450 grams Puff pastry dough
2 carrots
3 scallions
1 garlic clove
400 grams mixed Ground meat
2 tablespoons vegetable oil
1 generous pinch ground Caraway
½ teaspoon noble, sweet ground paprika
1 generous pinch ground allspice
salt
freshly ground peppers
Pastry flour (for kneading)
1 egg yolk

Preparation steps

Defrost puff pastry.

Preheat the oven to 200°C (approximately 390°F).

Peel and finely grate carrots. Rinse scallions, shake dry and cut into small cubes. Peel and mince garlic. Heat oil in a pan and fry meat and garlic. Add carrots and scallions. Season with spices, salt and pepper. Simmer for another 2-3 minutes. Season again to taste, remove from heat and let cool.

Roll out puff pastry on a floured surface and cut out 6 cm (approximately 2 1/3 inch) squares. Top squares with meat mixture, brush edges with water and fold squares diagonally into triangles. Press around edges with a fork to seal. Place pastries on a baking sheet lined with parchment paper.

Brush pastries with egg yolk and bake until golden brown, about 25 minutes. Remove from oven and serve warm.
