This recipe isn't a coffee that you would make every day. Because of its high sugar and fat content, it is better to have this as a treat on a special occasion. 

For a richer variation, you can use dark chocolate instead of milk.

2 sheets white gelatin
4 tablespoons Instant Coffee powder
2 eggs
4 teaspoons Coffee liqueur
1 pinch salt
2 ½ tablespoons sugar
1.333 cups light whipping cream (30% fat)

1 Pot, 1 Skillet, 1 Small bowl, 1 Cutting board, 1 Large knife, 1 Teaspoon, 1 Wooden spoon, 1 Sieve

Preparation steps

Chop the chocolate and melt over a hot bain-marie. Soak the gelatin in cold water. Mix the instant coffee powder with scant 1/2 cup cream.

Separate 1 egg and beat the egg yolk and the other egg with the coffee cream over a hot bain-marie until thick and creamy. Squeeze out the gelatin and dissolve in the mixture. Stir in the chocolate and coffee liqueur and stir over a cold bain-marie until cold.

Beat the egg white with a pinch of salt until stiff, trickling in the sugar at the same time. Whip the rest of the cream until stiff and fold both into the coffee mixture.

Divide the mousse between 4 cups and chill for at least 4 hours.

To serve, add a topping of whipped cream and dust with cocoa powder.
