Meringue Nests with Kiwi
Heat the oven to 300°F, and line a baking tray with grease-proof paper.
Beat the egg whites until stiff, then gradually add the sugar and vanilla extract, and continue beating until the mixture is firm and shiny.
Using a piping bag with a star nozzle, pipe 8 circles approximately 4" in diameter onto the grease-proof paper. Fill in the centers of 4 of the circles to make round bases.
