For the ice cream (40-50 scoops)
1 kilogram Sour cream
200 grams powdered sugar
125 milliliters lemon juice
15 grams
For the melon soup
2 Charentais melons (or musk-melon)
2 Passion fruit
Orange juice (50 ml)
lemon juice (50 ml)
2 Tbsps honey
2 centiliters Melon liqueur
4 Tbsps sugar
75 milliliters Dessert wine
80 grams Raspberries
For the sugar garnish
6 Tbsps sugar
3 Tbsps water

Preparation steps

1.

For the ice cream, mix all ingredients in a bowl and cover at least 2 hours in the refrigerator. Freeze in an ice maker or place bowl in the freezer. If using the freezer, stir often for the first hour.

For the melon soup, halve, seed and spoon melon pulp out with a spoon or melon baller. Weigh 400 grams (approximately 14 ounces) of melon pulp, puree melon and pass through a sieve.

Place cups of melon puree in the refrigerator.

Halve passion fruit, remove seeds and mash the pulp. Pass through a sieve.

Mix both fruit purees with orange and lemon juice, honey, melon liqueur and sugar, stir in the wine and allow to cool in the refrigerator.

To serve the melon soup, serve in chilled fruit halves or cups, add raspberries and add a dollop of the ice cream to each cup.

Garnish to taste with caramelized sugar (directions follow).

For the garnish, brush a work surface or parchment paper with with oil.

For caramelized sugar, mix sugar with 2 tablespoons water in a small pot and let boil, stirring constantly, until the water has evaporated. The sugar should slowly become a light brown caramel color. As soon as the sugar is a caramel brown color remove pot from heat and ladle or spoon sugar onto the oiled work surface in a grid-like pattern. Let sugar solidify in gridlike pattern (goes very quickly). Carefully remove sugar grid and use as garnish.
