½ cup Mayonnaise
1 Tbsp fresh parsley (chopped)
1 Tbsp grainy Mustard
1 Tbsp drained Caper (roughly chopped)
5 Cornichons (finely diced)
2 tsps lemon juice
kosher salt (to taste)
freshly ground Black pepper (to taste)
4 cups Canola oil
48 ozs boneless Beef sirloin (cut into cubes)
2 cups Mushrooms
2 cups Leeks (sliced into thick rounds)

Preparation steps

1.
Place the mayonnaise in a small bowl. Fold in the parsley, mustard, capers, cornichons and lemon juice. Season with salt and pepper.
2.
Place the oil into the fondue pot on medium heat. Make sure the fondue is never more than 2/3 full. Season the meat with salt and pepper. Skewer a piece of meat and mushroom and leek into the sizzling oil. Cook it to your liking and dip it into the herbed mayonnaise.
