50 grams
4 tablespoons
200 milliliters
hot Milk
1 splash
freshly grated Nutmeg

hard-boiled Quail eggs

Preparation steps

1.

Peel, rinse and boil the potatoes in salted water for about 30 minutes until tender.

2.

Rinse the wild garlic, pat dry and chop coarsely. Purée with the oil.

3.

Drain the potatoes and press through a ricer. Let the water evaporate and stir in the hot milk along with the wild garlic oil.

4.

Season with salt, lemon juice and nutmeg and serve garnished with peeled and quartered quail eggs.
