200 milliliters Whipped cream
1 packet whipped cream stabilizer
200 milliliters cold Coffee
4 centiliters Brandy (or Marsala or almond liqueur)
20 Ladyfinger
cocoa powder (for dusting)
Chocolate curl (for garnish)

Preparation steps

1.

Separate eggs and beat yolks, heavy cream and half the sugar over a hot water bath with an electric mixer. Remove from heat, stir until cold and gradually mix in masscarpone. Beat egg whites with remaining sugar and fold into cream mixture. Beat whip cream until stiff and fold into cream mixture.

Mix coffee and brandy. Fully immerse half of the ladyfingers into the mixture and line bottom of a baking dish measuring about 18x25 cm (approximately 7x10 inches) with ladyfingers. Top with half of cream mixture, repeat with a second layer of soaked ladyfingers and spread remaining cream on top.

Refrigerate at least 2 hours.

Before serving, dust with plenty of cocoa powder and garnish with chocolate rolls.
