Preparation steps

For the cherries, drain cherries and reserve juice. Mix cornstarch in a bowl with a little juice until smooth. Mix remaining cherry juice in a saucepan with honey and orange juice, heat, stir in cornstarch mixture, bring to a boil, add cherries and Amaretto.

For the cream, coarsely grate chocolate. Whip cream until stiff. Mix mascarpone in a bowl with quark with sugar and cream stabilizer. Stir until smooth. Fold whipped cream and chocolate into the mixture. Refrigerate. For the sauce, chop chocolate into small pieces, mix with sauce ingredients and melt either in the microwave at its lowest level for about 3 minutes or above a hot water bath.

To serve, arrange mascarpone cream over 6-8 dessert plates, cover with cherries and warm sauce. Serve immediately.
