200 grams butter
80 grams sugar
1 packet Vanilla sugar
200 grams Marzipan
5 drops Almond extract
3 eggs
200 grams Pastry flour
100 grams cornstarch
200 grams Raspberry jam
powdered sugar (to sprinkle)

Preparation steps

Add softened butter to sugar and vanilla sugar in a bowl and mix until fluffy. Add Marzipan, almond extract and eggs and mix well. Mix together flour and cornstarch and fold into batter.

Preheat oven to 180°C (approximately 350°F). Pour batter into a piping bag and pipe rings about 6 cm (approximately 2-1/2 inch) in diameter on a greased baking sheet. Bake for 12 minutes until golden brown and allow to cool. Heat raspberry jam and pass through a sieve. Spread jam onto bottoms of cookies and sandwich together. Dust with powdered sugar and serve.
