Seldom do sweet things have as much fibre as the wreaths: 3.5 grams per piece comes together after all. And because butter is replaced by high-quality fats from oil and almonds (in marzipan), the proportion of saturated fatty acids is pleasingly low.

Be selective when buying marzipan paste: products with the quality label "MOO" contain the least sugar. They are made from a particularly high proportion of selected almonds from Mediterranean countries and taste correspondingly aromatic.

5 ounces Whole wheat flour (plus more for dusting)
5 ounces Spelt flour
3 teaspoons Baking powder
4 tablespoons sugar (about 75 grams)
1 pinch salt
5 ounces Quark
½ cup
¼ cup Canola oil
4 ounces Marzipan
2 tablespoons chopped Shelled pistachio (about 25 grams)
1 egg

1 Mixing bowl, 1 Hand mixer, 1 Cutting board, 1 Large knife, 2 Baking sheets, 1 Parchment paper, 1 Small bowl, 1 Fork, 1 Brush, 1 Wire rack

Preparation steps

Mix the two flours and baking powder in a bowl. Add sugar, salt, quark, milk and oil. Mix everything with the dough hook of a hand mixer until smooth. Place on a lightly floured surface.

Chop the marzipan coarsely, add with the pistachios to the dough and knead with your hands.

Divide the dough into 20 portions and form into thin logs of about 30 cm (approximately 12 inches) in length. Twist 2 logs together several times loosely to form a rope. Repeat with remaining logs.

Form each cord into a ring, pinching the ends to adhere. Line 2 baking sheets with parchment paper and spread the wreaths on them. Separate the egg. Whisk the egg yolk with 1 tablespoon water (reserve white for another use).

Top wreaths with the nuts and egg mixture. Bake on bottom rack of preheated oven at 180°C (fan 160°C, gas: mark 2-3)(approximately 350°F) for about 15 minutes. Remove wreaths and let cool on a wire rack before serving.
