200 grams blanched, ground almonds
150 grams honey
200 grams softened butter
5 eggs
1 pinch salt
½ tsp Natural vanilla
5 Tbsps Orange liqueur
1 organic Orange (zested and juiced)
200 grams Pastry flour
100 grams Spelt flour
1 tsp Baking powder
50 grams blanched, ground almonds
butter (for greasing)
breadcrumbs (for spreading)
150 grams Orange marmalade
250 grams Milk chocolate

Preparation steps


Combine almonds with 100 grams (approximately 3.5 ounces) of honey. Set aside 150 grams (approximately 5.3 ounces) of marzipan. Beat butter, eggs, remaining marzipan and honey until light and fluffy. Stir in salt, vanilla, 2 tablespoons orange liqueur, zest and juice of half an orange.


Preheat oven to 180°C (approximately 200°F).

Combine flour, baking powder and almonds stir into batter. Grease a loaf pan with butter and dust with flour. Pour batter into pan and bake on the bottom rail for about 55 minutes.

Remove from oven and let cool. Carefully remove from pan and let cool completely on a wire rack. Cut horizontally 3 times, forming 4 layers.

Combine remaining orange juice with the remaining orange liqueur and brush onto all cut surfaces of cake. Stir jam until smooth spread onto the bottom layer of cake. Top with second layer, then add remaining marzipan and top with the third layer of cake. Top with remaining jam and the last layer of cake.

Melt chocolate over a double boiler. Remove from heat and let cool slightly. Cover cake with chocolate, let dry, slice and serve.
