Attention Mazipan fans! This marzipan biscuit tastes heavenly and is the perfect size to nibble on without making it too much. Thanks to the almonds it contains, the biscuit provides bone-strengthening calcium and other minerals such as iron, magnesium and phosphorus. The antioxidant vitamin E from the kernels protects the skin against premature aging and provides all-round cell protection.
The marzipan biscuit can also be prepared more easily by not grinding the almond kernels first, but by buying them already ground. Airtightly closed and stored in a cool place, the pastry can be kept for several days.

- 2 tsps grated Lemon peel
- Rose water

Preparation steps
Place almonds in a pot of boiling water for a few seconds, then drain in a colander and remove skin. Pat almonds pat and let dry overnight in a warm place. Finely grind almonds, mix in a bowl with powdered sugar, 3-4 tablespoons water and lemon zest and knead into a solid, smooth mixture. With wet hands, roll almond mixture into small balls, flatten down slightly, sprinkle with rose water and press 1 halved almond into each (or roll in chopped almonds). Let dry overnight.
Place dried circles on a lightly greased baking sheet and bake in a preheated 150° (approximately 300°F) for 10-15 minutes until light brown. Store marzipan in an airtight container.
