Ingredients

For the jelly
500 grams mixed Berry
500 milliliters red Currant juice
2 packets Vanilla sugar
2 Tbsps cornstarch
For the mousse
4 white Gelatin sheet
200 grams white Couverture
100 grams Marzipan
100 milliliters milk
2 egg yolks
1 lemon zest
200 milliliters Whipped cream
2 Tbsps slivered almonds
mint (for garnish)

Preparation steps

For the jelly: Rinse berries. Boil currant juice and vanilla sugar. Whisk together equal parts cornstarch and cold water until smooth. Whisk cornstarch into currant juice and bring to a boil, stirring constantly. Add berries, infuse for a few minutes and let cool.

For the mousse: Soak gelatine in cold water. Chop chocolate and melt over a double boiler. Dice marzipan. Heat milk, add marzipan and puree. Dissolve gelatine in marzipan mixture. Beat egg yolks until frothy, then gradually add milk mixture. Stir in chocolate and lemon zest. Let mixture cool while stirring. Beat cream until stiff and fold into mousse. Chill.

Toast almonds in a dry pan. Plate mousse and drizzle with jelly serve garnished with almonds and mint.
