Preparation steps

For the cake, knead butter and in a bowl. Cut marzipan into pieces and add to bowl. Add egg yolks, sugar, vanilla sugar and salt. Knead together quickly. Wrap in plastic wrap and chill for 30 minutes.

For the filling, mix nuts with 1 tablespoon sugar. Mix remaining sugar with egg yolks. Mix with nut mixture, cream and orange blossom water.

Butter a springform pan and sprinkle with flour. Take 2/3 of dough and split in half. Roll each out until about 0.5 cm (approximately 1/5 inch) thick. Press one into base of pan. Press other along sides of pan to create a high edge. Spread filling over dough and smooth. Roll out remaining 1/3 of dough and place on top of filling. Bake in a preheated oven at 190°C (approximately 350°F) for 40 minutes.

Remove and let cool.

To decorate, brush rose petals with egg whites and sprinkle with sugar. Dry on a wire rack. Dust cake with powdered sugar and garnish with rose petals. Slice and serve.
