very fresh Sardine
500 milliliters

fresh Parsley
freshly ground Pepper
130 milliliters

Preparation steps

1.

Remove the heads from the sardine, slice lengthwise and remove the spines. Rinse and pat dry. Flatten the fillets and place skin-side up in a baking dish. Sprinkle with salt and cover with white wine vinegar. Cover and refrigerate overnight.

Remove the refrigerator, rinse the fillets and pat dry. Peel the garlic and cut into thin slices. Rinse the parsley, pat dry, remove the leaves and coarsely chop. 

3.

Season the sardines with salt and pepper, sprinkle with the garlic and parsley and drizzle with lemon juice and olive oil. Refrigerate for at least 1 hour. 

4.

Remove from the refrigerator and serve with crusty bread and a dry wine.
