- 2 garlic cloves
- 1 bunch parsley
- grated Shell of 1 lemon (untreated)
- 6 Tbsps olive oil
- freshly ground pepper
- 4 Pork cutlets (each about 150g)
- 500 grams Red Hungarian wax pepper
- Juice (of 1 lemon)
- salt
- For the potatoes
- 600 grams small potatoes (waxy)
- salt
- 4 Tbsps olive oil
- 3 bay leaves
- salt
- freshly ground pepper
Preparation steps

For the pork chops, peel garlic and finely chop. Rinse parsley, shake dry and finely chop. Mix garlic, parsley, lemon zest and olive oil together and season with pepper. Rinse chops and rub with 2/3 of marinade. Cover and chill for 1 hour. Rinse wax pepper, pat dry and sprinkle with remaining marinade. Place aside.

For the potatoes, rinse potatoes and cook for 15 minutes in salted water. Cool slightly and peel. Heat olive oil in a pan and cook potatoes and bay leaf for 15 minutes. Season with salt and pepper.

Heat a dry and large nonstick skillet. Cook pork chops on both sides. Add wax pepper. Pour in lemon juice and cook over medium heat for 15 minutes. Turn pork chops 2-3 times. Season with salt. Serve with potatoes.
