250 grams room temperature butter
200 grams sugar
1 tablespoon Vanilla sugar
1 pinch salt
1 generous pinch untreated lemon zest
4 eggs
400 grams Pastry flour
100 grams cornstarch
1 teaspoon Baking powder
150 milliliters milk
120 Dark couverture chocolate (semi-sweet)
powdered sugar (for dusting)

Preparation steps

1.

Grease cake pan with butter and dust with flour. Preheat oven to 180°C (approximately 350°F).

Combine butter, sugar and vanilla sugar and beat until creamy. Blend in lemon zest and season with salt. Mix the eggs in gradually. Combine flour, corn starch and baking powder and stir alternately with the milk into the batter. Melt chocolate over hot water bath and let cool slightly. Divide batter in half and place into another bowl. Gradually stir chocolate into one half of the batter.

Pour half of the light colored batter into the cake pan and draw irregular waves into it with a spoon. Then pour in chocolate batter and repeat drawing lines. Finish with the light colored batter and bake in oven for about 50 minutes (toothpick test).

Allow to cool slightly, take cake out of pan by inverting mold and let cool completely.

Serve dusted with powdered sugar.
