4 separated eggs
300 grams Pastry flour
½ packet Baking powder
6 tablespoons milk
50 grams ground, white almonds
40 grams bitter Cocoa
2 tablespoons milk

Preparation steps

Grease a cake ring with butter and sprinkle with breadcrumbs. For the batter, beat the butter, sugar and vanilla sugar until creamy. Gradually stir in the egg yolks. Sift the flour and baking powder. Mix the flour, baking powder and almonds. Alternately stir the flour mixture and the milk into the batter. Whip the egg whites until stiff and fold into the batter. Preheat the oven to 180°C (approximately 350°F).

Pour 1/3 of the batter into a separate bowl. Mix the cocoa powder and milk into the smaller portion. Pour the lighter batter into the pan and top with the darker batter. Use a fork to mix the batters, forming a marbled pattern. Bake for about 60 minutes, until a toothpick inserted into the center comes out clean. Remove from the oven and flip onto a wire rack to cool.

For the topping, melt the dark chocolate over a hot water bath. Stir in the cream and spread over the finished cake. Let dry overnight, cut into pieces and serve.
