For the cookies
125 grams softened butter
150 grams Maple syrup
1 egg
250 grams Pastry flour
1 tablespoon cornstarch
½ teaspoon Baking powder
150 milliliters Buttermilk
100 grams Pecan
For the cream filling
120 grams butter
80 grams powdered sugar
150 grams Vanilla cream (Finished product)

Preparation steps


Preheat the oven to 180°C (approximately 350°F). Line a baking sheet with parchment paper.


For the cookies: In the bowl of an electric mixer, beat the butter with the maple syrup until creamy and beat in the egg. Mix the flour with the cornstarch and baking powder and alternately beat into the batter with the buttermilk, beginning and ending with the flour mixture.  Set aside 12 nuts for garnish and coarsely chop the rest. Fold the chopped nuts into the batter.

With a spoon drop 24 mounds of batter onto the baking sheet, spacing them 2 inches apart. Top half with the reserved nuts and bake until golden brown, about 15 minutes. Carefully remove from the baking sheet and cool on a wire rack.


For the cream filling: Beat the butter with the powdered sugar until creamy and gradually add the vanilla cream. Pour the cream into a piping bag fitted with a star tip. Pipe the cream onto the flat side of the cookies without nuts and top with the remaining cookies, nut side up.
