¼ cup sugar
¼ cup butter (melted)
2 cups cream cheese (softened)
1 cup sugar
2 teaspoons Orange extract
1 cup heavy whipping cream (whipped)
2 teaspoons grated Orange zest
3 cups canned Mandarin orange (drained and patted dry and divided)

Preparation steps

Preheat oven to 350°F.

To make the crust, combine the granola with sugar and melted butter in a medium bowl and mix well.

Press the crust into the bottom of a 9" pie plate. Bake at 350° for 8-10 minutes or until lightly browned. Remove the crust from the oven and set aside to cool completely while preparing the filling.
4.
For filling, beat cream cheese and sugar in a bowl until light and fluffy. Add the orange extract; beat well. Fold in whipped cream, orange zest and 1/2 can of drained and dried mandarin oranges. Spread evenly into crust. Arrange the other 1 1/2 cans of mandarin oranges in decorative design with a sprinkling of granola (if desired) on top of filling. Chill at least 3 hours.
