Preparation steps

Preheat the oven to 130°C (approximately 265°F) convection. Line a baking sheet with parchment paper and baking wafers.

Beat egg whites with the lemon juice until stiff, gradually beating in the sugar with the powdered sugar until the mixture is very stiff and shiny. Carefully fold in the almonds and portion the mixture on the baking wafers. Bake in preheated oven for 30 minutes. After 30 minutes, slice baking wafers with a sharp knife into strips about 3 cm (approximately 1 1/4-inch) wide and reduce the heat to 100°C (approximately 210°F) convection. Bake until the macaroons are soft and flexible but have a solid surface, about 20 minutes more. Remove and allow to cool before serving.
