Preparation steps

1.

Line two baking sheets with parchment paper.

2.

Grind the almonds very finely in a blender with the powdered sugar and then sift through a fine-meshed sieve. Beat egg whites with the lemon juice until stiff. Add sugar and continue to beat until stiff and shiny. Then fold in the almond mixture. Divide the dough in half and tint 1 half with a few drops of green food coloring. Tint the second half with yellow food coloring. Place mixtures in separate pastry bags with large round tips. Pipe macarons with some space between in uniform dots (2 cm diameter/approximately 3/4 inch). Let dry about 1 hour.

3.

Preheat the oven to 140°C (approximately 275°F) convection.

4.

Bake meringues in the oven for 10-15 minutes. Gently pull the parchment paper from the sheet and allow to cool on a wire rack.

5.

Top the bottoms of half of the meringues with about 1 teaspoon jam and place a second meringue on top. Press gently.
