Preparation steps

For the cookies: In a bowl, beat the butter with the sugar and 1 pinch of salt until light and fluffy. Stir in the chocolate, vanilla bean seeds and cinnamon. Add the flour, baking powder, macadamia nuts, raisins and egg, and knead until a smooth dough is formed. Shape into a disk, wrap in plastic wrap and refrigerate for 1 hour.

Divide the dough into walnut-sized portions with a small spoon. Using moist hands, shape into balls. Place on a parchment-lined baking sheet 3 cm (approximately 1 1/2 inch) apart. Bake in a 180°C (approximately 350°F) convection oven for 10 minutes. Remove and cool completely.

For decoration: Coarsly chop the couverture and place in a bowl. Set over a pot of simmering water and stir until melted. Stir half the nuts into the chocolate. Coarsely chop the rest. Place a spoon of chocolate on top of each cookie. Sprinkle with the chopped macdamia nuts. Allow to set before serving.
