2 teaspoons fresh Yeast
7 tablespoons lukewarm milk
8 ½ ounces Pastry flour
1 tablespoon honey
1 egg
1 pinch salt
2 ½ tablespoons melted butter
vegetable oil (for frying)
sugar (for dusting)
For the syrup
7 tablespoons honey
4 tablespoons sugar
To serve
3 tablespoons chopped almonds
Ground cinnamon
Vanilla ice cream (if desired)

Preparation steps

Crumble the yeast into the lukewarm milk and stir until dissolved. Sift the flour into a large bowl and make a well in the center. Pour the milk mixture and honey into the well, mix with a bit of flour, cover and let stand for about 30 minutes. Add the egg, salt and 5 teaspoons of melted butter and knead to form a smooth, shiny dough. Cover and let stand for another 30 minutes.

Knead the dough briefly and scoop into small balls, using the remaining melted butter to coat the spoon and your hands to prevent sticking. Heat the vegetable oil to 340°F in a large pot. Carefully drop the dough balls into the hot oil and fry for 2-3 minutes, until golden brown. Remove from the oil with a slotted spoon and drain on paper towels.

For the syrup: Boil the honey and sugar with 3-4 tablespoons of water for about 3-4 minutes. Remove from heat and let cool.

Arrange the fried dough balls on a large serving platter. Drizzle the syrup over the top and sprinkle with chopped almonds and cinnamon. Serve with vanilla ice cream, if desired.
