butter (melted)

egg (beaten)
- ¾ cup
plain Yogurt

self-rising flour (sifted)

cream (38% fat)

Preparation steps
1.
For the cupcake: heat the oven to 180°C (160° fan) 350°F gas 4. Place paper cases or muffin cups in a 10 hole muffin tin.

Combine the butter, egg, yoghurt, orange juice and zest in a mixing bowl. Sift in the flour, baking powder and sugar.
3.
Spoon the mixture into the paper cases and bake for 25 minutes until golden and risen. Cool in the tins for 5 minutes, then place on a wire rack to cool completely.
4.
To decorate: whisk together the cream, icing sugar and vanilla until thick. Spread generously on top of the cakes and insert a lollipop into each cake.
