Lokum (Turkish Delight)
- For the candies
- 1 kilogram sugar
- 250 grams Rice flour (from a Turkish specialty or Asian store)
- 1 ¼ liters water
- ¼ teaspoon Lemon salt (from a Turkish specialty store)
- powdered sugar (for dusting)
- For preparation
- 1 Dish cloth
- 1 square or rectangular Pan (or glass mold)
- 1 sharp Knife
- Food coloring (red, green or yellow)
Line the mold with the cotton cloth and sprinkle with half of the rice flour. Place the sugar, water and the remaining rice flour in a saucepan and bring to a boil over high heat. Add the lemon salt and desired food coloring, reduce the heat and cook the syrup, stirring constantly. Cook until the mixture develops a moldable consistency. Using a teaspoon, remove a small amount of the mixture and place in ice water. Shape it into a ball with your fingers in the water. If this sample is elastic after cooling, then the mixture is ready.
Pour the hot mixture into the prepared pan and set aside to completely cool and solidify. Dust a board with powdered sugar and turn out the candy from the mold. Remove the cloth and remove the residue from the rice flour. Coat a knife with powdered sugar and cut into bite-sized pieces. To serve, dip the pieces in powdered sugar and arrange on a plate or store in an airtight container.
