Lobster Mac 'n Cheese

- 4 cups macaroni
- 3 tablespoons butter
- 2 tablespoons flour
- ⅞ cup cream
- ⅜ cup dry white wine
- ⅔ cup lobster stock
- 1 ½ cups smooth, mild Cheese (grated, e. g. cheddar, Emmental and parmesan)
- Nutmeg (freshly grated)
- 1 ⅔ cups Lobster meat (shelled and ready to cook, chopped)
- 2 tablespoons panko breadcrumbs

Heat the oven to 200°C / 400°F.
Cook the pasta in salted water until al dente then drain thoroughly.
Melt 2 tbsp butter in a hot, oven-proof pan. Stir in the flour and gradually add the cream, stirring all the while. Continuing to stir, add the wine and stock and stir until thick and creamy. If necessary, add a little extra stock.
Now, gradually stir in the cheese. Season to taste with salt, ground black pepper and nutmeg. Mix through the pasta and lobster meat.
Fry the breadcrumbs in the remaining hot butter until golden. Scatter over the top of the pasta and bake in the oven for around 20 minutes until golden brown.
