Preparation steps

1.

Remove sausage from casing and cut into 1-cm (approximately 1/2-inch) slices. Transfer to shallow bowls.

Peel and finely chop onions. Rinse and thinly slice chives. In a bowl, whisk together vinegar and mustard. Season with salt, pepper and sugar. Whisk in oil until emulsified. Stir in onions and chives. Spoon sauce over sausage slices. Let marinate about 30 minutes. Serve with bread and butter.
