For the pastry
200 grams Pastry flour
1 Tbsp dark Cocoa
1 pinch salt
2 Tbsps sugar
140 grams cold butter
1 egg
butter (for the pan)
dried Legume (for blind baking)
For the topping
5 egg yolks
3 egg whites
1 Tbsp cornstarch
5 Tbsps Whipped cream
100 grams powdered sugar
50 milliliters lemon juice
1 tsp grated Lemon peel
50 milliliters Lime juice
In addition
120 milliliters Whipped cream
1 Tbsp powdered sugar
Limes (for garnishing)

Preparation steps


For the pastry: pile flour on the work surface, mix with cocoa, salt and sugar and make a well in the center. Cut cold butter into small pieces and arrange around the well. Add egg to the well and chop all ingredients with a knife until crumbly. Quickly knead into a smooth pastry and shape into a ball, wrap in plastic wrap and refrigerate for 30 minutes. 


Roll out pastry between two sheets of plastic wrap and line buttered tart pan with it, making an edge all around. Cover with parchment paper and weigh down with beans. Bake in preheated oven at 180°C (approximatley 350°F) for about 10 minutes. Remove from the oven and take out beans and paper, cool completely.  

 For the topping: whisk egg yolks with cornstarch, cream and 50 grams (approximately 1.7 ounces) of powdered sugar over a hot water bath until fluffy. Add lemon juicem lemon zest and lime juice and mix well. 


Beat egg whites unitl stiff and add remaining powdered sugar, beat until very stiff. Fold egg whites into lemon cream. Spread on pastry and bake in preheated oven at 150°C (approximately 300°F) for about 25-30 minutes. Remove from the oven and cool. Cover and refrigerate for at least 4 hours. Beat cream with powdered sugar until stiff and pour into a piping bag with a star tip. Remove tart from the pan and cut into slices. Garnish with whipped cream and lime slices. Dust with powdered sugar and serve.
