250 grams Whole Wheat Butter Cookies
120 grams melted butter (chilled)
6 Limes
4 very fresh eggs
250 milliliters sweetened condensed milk
8 sheets gelatin
120 grams powdered sugar
200 grams Whipped cream

Preparation steps


Crumble the whole-wheat butter cookies and mix with the butter. Spread the cookie mixture into the base and edges of a springform pan lined with baking paper. Press firmly and leave to set in the refrigerator.

Rinse the lime in hot water and pat dry. Grate the zest from 3 limes. Squeeze all the limes and measure 200 ml (approximately 1 cup) of juice.

Separate the eggs. Beat the yolks with the condensed milk in a pot until fluffy. Stir in the lime juice and the zest. Place the mixture on stove and heat briefly while stirring, but do not boil! Set aside to cool slightly.

Soften the gelatine in cold water and then dissolve into the still hot egg yolk mixture. Allow the mixture to cool until lukewarm.

Beat the egg whites with the powdered sugar until stiff and fold into the egg yolk mixture. Spread the mixture over the cookie base into the springform pan and leave to set in the refrigerator.

Whip the cream, fill into a piping bag with a serrated nozzle, and decorate the pie on the edges. Serve cut into pieces.
