Preparation steps

For the cupcakes: Preheat the oven to 180°C (approximately 350°F) convection. Line a 12-cup muffin tin with paper liners.

In the bowl of an electric mixer, beat the butter with the sugar until fluffy. Add the eggs one at a time, beating well after each addition. Beat in the lime zest and juice. Stir together the flour, ground almonds and baking powder, fold into the butter mixture. Spoon into the tin and bake until golden brown and a toothpick inserted in the center of a cupcake comes out clean, about 25 minutes. Remove from the oven and let cool in the tin.

For decoration: Mix the powdered sugar with the milk until thick and spreadable. Color with food coloring, if desired and spread on the cupcakes.
