Kaffir lime peel (2 tsp finely grated)
250 milliliters milk
100 grams Whipped cream
75 grams sugar
3 eggs
2 egg yolks
cane sugar (to sprinkle)

Preparation steps

Bring the milk to a boil with the cream and lime peel. Beat the eggs and egg yolks with the sugar until creamy, but not frothy. Slowly stream in the hot milk, whisking continuously. Stir in the juice. Press the cream through a sieve and transfer into the serving ramekins. Place the ramekins in a roasting or baking pan with high sides. Pour hot water into the pan so that the water covers 2/3 of the sides of the ramekins. Bake the creme brule at 200°C (approximately 400°F) for about 20 minutes. The center of each ramekin should not be completely set. Take out, remove from the water bath and chill until set.

Before serving, sprinkle the ramekins with brown sugar and place under the broiler until the surface is caramelized. Serve immediately, but be careful, the dish will be hot.
