Ingredients

For Muffins
1 cup
Brown Lentils (rinsed and picked over)
salt (to taste)

eggs (separated)
¾ cup
freshly grated Parmesan cheese
2 tablespoons
fresh parsley (chopped)
2 tablespoons
1 ½ tablespoons
1 clove
garlic (peeled and minced)
1 pinch
In Addition
1 handful
baby leaf lettuce (or watercress)
2
organic Oranges (peeled)
1 tablespoon
2 tablespoons
freshly ground Black pepper (to taste)

Preparation steps

1.
Place lentils in a saucepan and cover with cold water. Add salt, bring to a boil and simmer for about 40 to 45 minutes, or until tender.

Drain lentils well and set aside to cool.

Preheat oven to 350º F. Coat the muffin tin with nonstick cooking spray.

Lightly beat the egg yolks, stir in cheese, parsley, lentils, flour, lemon juice, and garlic. Season with salt and cayenne pepper.

In a separate bowl, combine the egg whites with a pinch of salt and beat until stiff. Fold egg whites into lentil mixture. Spoon into prepared muffin tin and bake for about 25 to 30 minutes, or until a wooden toothpick inserted into the center of the muffin comes out clean. Cool in the pan on a wire rack for 10 minutes. Remove from pan and continue cooling on a wire rack.

Rinse the lettuce and spin dry. Remove all the white pith from the peeled oranges. Separate segments.
7.
In a small bowl, combine the lemon juice and walnut oil, season with salt and pepper.
8.
Place a muffin on each plate. Divide the lettuce and orange segments between plates. Drizzle with dressing. Serve.
