1 Tart pan (24 cm diameter)
For the dough
200 grams Pastry flour
100 grams cold butter
1 pinch salt
1 Tbsp cold water
For the cream
4 eggs
150 grams sugar
3 organic lemons (Juice and zest)
125 grams butter

Preparation steps

For the dough, combine flour, chopped butter, salt and 1-2 tablespoons of water. Knead into a smooth dough, shape into a ball, wrap in plastic wrap and chill for 1 hour.

Roll dough out on a floured surface until similar in size and shape of tart pan. Roll dough up on rolling pin and roll out over tart tin. Press to secure and cut off excess dough.

For the cream, beat eggs with sugar in a metal bowl until foamy. Stir in lemon juice and zest and add butter in small flakes. Beat with an electric mixer until thick over a hot water bath.

Pour cream over dough, smooth and bake in a preheated oven at 200°C (approximately 400°F) for 30 minutes. Remove and cool.

If desired, dust cake with powdered sugar and serve with pomegranate sauce.
