1 Rabbit (about 1kg)
lemons
1 organic lemon
1 handful Pine nuts
1 jar white wine
4 Tbsps olive oil
2 garlic cloves
1 tsp oregano
l Beef broth (from a jar)
400 grams small, new potatoes
salt
peppers

Preparation steps

Divide rabbit into pieces, rinse and pat dry. Peel garlic and chop finely, mix with olive oil and pine nuts. Heat olive oil in a pan and brown meat on all sides, add pine nuts and garlic and saute for a few minutes. Add white wine and simmer for 5 minutes. Grate zest of 1/2 lemon. Squeeze juice. Add  lemon juice, oregano, lemon zest and broth to the pan and simmer for about 45 minutes or low heat.

Scrub potatoes and cook in salted water for 25 minutes. Cut remaining lemon into slices. Arrange rabbit and potatoes on plates, garnish with lemon slices and serve.
