Lemon Granita with Mint
In a saucepan, bring the water to a boil. Pluck the mint leaves, add them to the pan and boil briefly. Remove from the heat and steep 2-5 minutes. Pour through a sieve and remove the mint, let cool. Stir the powdered sugar, the sparkling wine and the lemon juice into the mint infusion. Season with peppermint liqueur. Pour into a shallow metal mold and freeze.
Stir with a fork every 20-30 minutes to prevent large ice crystals from forming. Freeze until all the liquid is frozen and is composed of small ice crystals.
Spread the granita into 4 glasses and serve garnished with mint.
