Lemon Cupcakes with Lemon Icing
For the cupcakes: Combine the flour, baking powder, vanilla sugar, lemon zest and salt in a mixing bowl.
Beat the softened butter and sugar until creamy then stir in the lemon juice, eggs and yogurt. Mix into the dry ingredients until just combined.
Grease a muffin pan.
Fill each muffin recess with 2 heaping tablespoons of batter and bake in a preheated oven (180°C) (approximately 350°F) for about 25 minutes, until a toothpick inserted in the center comes out clean.
Let cool for 5 minutes in the pan then carefully remove from the pan and let cool completely.
For the icing: Mix the powdered sugar and lemon juice until thick and spoon over the cupcakes.
