Preparation steps

Mix the flour with the sugar, salt and lemon zest. Dump onto a work surface & form a well in the middle. Place the egg and lemon juice in the well and dollop the butter in small pieces in the dough around the well. Using your hands, knead together to form a smooth dough, then form into a ball, wrap in plastic wrap and chill for 30 minutes in the refrigerator.

Preheat the oven to 180°C (approximately 350°F).

Put the dough on a floured surface. Roll out thinly and use a cookie cutter to cut out 0.4 cm (approximately 1/5 inch) stars. Place the stars on a baking sheet lined with parchment paper and bake in the preheated oven for 8-10 minutes or until light yellow. Remoe from oven, remove from the sheet with the parchment paper and leave to cool on a wire rack.

For the decorations, beat the egg whites until stiff, gradually sprinkling in the powdered sugar. Continue beating until a thick, stiff peaks are formed. Place in a freezer bag, cut off a tiny corner and decorate the stars with it. Sprinkle with granulated sugar and leave to dry.
